Cook's Corner Recipe: Mock Mascarpone Cheese

CHEESE
MOCK MASCARPONE CHEESE
2 (8-ounce) packages cream cheese, at room temperature
½ cup heavy cream
5 tablespoons sour cream
1 cup confectioners' sugar
Place cream cheese, cream, sour cream and confectioners' sugar in small bowl of electric mixer and beat until sugar is dissolved and cheese is spreadable. Makes about 1 ½ cups.
Per ¼-cup: 420 calories (76 percent from fat), 35.9 g fat (22.5 g saturated),115 mg cholesterol, 6.4 g protein, 19.7 g carbohydrates, 0 fiber, 236.4 mg sodium.
