Recipe: Grandma Edith's Onion Noodle Kugel

GRANDMA EDITH'S ONION NOODLE KUGEL

Grandma Edith created this kugel for Carneiro, who prefers savory to sweet.

12 ounces egg noodles, cooked per package instructions

1 stick butter or margarine, melted

16 ounces low-fat, small curd cottage cheese

4 eggs

1/4 small onion, grated (about 1 ½ tablespoons)

½ teaspoon salt

1/4 teaspoon pepper

1 teaspoon butter or margarine

Heat oven to 350 degrees.

Mix cooked noodles, melted butter, cottage cheese, eggs and onion in a large bowl, season with salt and pepper. Pour into a greased 9 x 13-inch baking dish. Dot with additional teaspoon of butter or margarine.

Bake for a hour, or until golden brown on top. Makes 8 servings.
