Cook's Corner Recipe: Cilantro Cream Sauce

SAUCE

CILANTRO CREAM SAUCE

• 1 jalapeño pepper

• 1 bunch cilantro

• 1 small garlic clove

• Juice of 1 lime

• 1 (8-ounce) container plain yogurt or sour cream

• ½ teaspoon salt, or to taste

Split the jalapeño and remove stem and seeds. Coarsely chop the cilantro. Smash the garlic. Place them in a food processor or blender with the lime juice and puree. With the machine running, add the yogurt and blend until smooth. Taste for seasoning and add salt and/or additional lime juice if needed. Makes about 1 ½ cups.

Per tablespoon: 8 calories (37 percent from fat), 0.3 g fat (0.2g saturated, 0.1 g monounsaturated), 1.2 mg cholesterol, 0.4 g protein, 0.8 g carbohydrates, 0.1 g fiber, 35.4 mg sodium.
