From Linda Bladholm's Fork on the Road
DESSERT
FRUIT IN CARAMEL SAUCE
Serve these fruit slices in buttery caramel sauce with ice cream. Pears can be substituted for apples.
2 medium Golden Delicious apples
8 tablespoons (1 stick) butter
½ cup packed light brown sugar
3 medium bananas
½ cup pecans
Cut apples into wedges. Melt the butter in a wide skillet over medium heat. Add apples and cook about 5 minutes, stirring often. Push apples to one side of the skillet. Reduce the heat to low. Add the brown sugar, stirring until melted. Gradually stir in 1/3 cup water. Peel bananas and cut into 2-inch diagonal pieces. Add to pan with pecans, raise heat to medium and cook until bananas are heated through, about 3 minutes, gently turning from time to time. Makes 6 servings.
