Dressing is sweet, tangy -- and pink

Q: Does anyone have a recipe for red onion-poppy seed salad dressing? It was served at a luncheon I attended, and it was very good. The caterer declined to share the recipe. The dressing was pink, slightly sweet and had a robust onion flavor. I would think that something more than red onions would have been added to make the bright pink color.

A: I use this dressing, made with sweet red onions, on spinach and strawberry salad. It's also wonderful drizzled on poached chicken or fish. There's a nice balance of sweet and tangy, and the pink color is fun, a product of both the onion and the vinegar. If you prefer a neutral color, substitute champagne, cider or rice wine vinegar and Vidalia onions.

Q: I'm searching for a recipe for a healthy cookie, which I got out of a magazine years ago. It had wheat germ, bran, whole wheat flour, molasses, walnuts and raisins. My kids loved them and I've lost the recipe. I would love to make them for the grandchildren.

A: I combined a recipe for a sugar cookie from B'rer Rabbit molasses with a molasses crinkle recipe from a vintage Woman's Day cookbook and fiddled a bit, adding extra ingredients to come up with a recipe I hope comes close to what you remember. The cookies are moist and chewy and taste much like a spiced wafer, but are softer and thicker. Watch the baking time; if you bake too long you get a hard cookie -- but even the mistakes taste good dunked in milk or coffee!

QUICK DESSERT

Mollie W. sent the ice cream recipe here as her contribution to our ongoing quick-summer-desserts theme. ``I have been making this for almost 40 years,'' she says. ``My children, and now my grandchildren, love to help -- and can't wait for it to harden enough to eat. It is wonderfully refreshing, just a little bit tart, and perfect with fresh summer berries, mangoes or other fruit on top.''

I seem to remember my grandmother making something similar in those old metal ice cube trays, with the cube insert taken out after the initial freezing time. We'd run outside and gather peaches from the backyard tree to slice on top of the ice cream. Thanks for awakening a lovely memory.

Q: I am missing a beloved, soft-covered Florida seafood cookbook that contains a recipe for mahi mahi (also known as dolphin fish), okra and plum tomatoes. Served over a bed of rice, it was delicious.
