Bova names Casa Casuarina chef
The Boca Raton-based Bova Group is taking over the restaurant at South Beach's storied Casa Casuarina, the one-time Versace mansion, installing a ``modern Italian menu'' overseen by Wolfgang Birk, who will serve as both executive and corporate chef. Birk comes to the job from the Gaylord National Resort & Convention Center in suburban Washington, D.C., where he was executive chef and general manager of two dining venues. On Fort Lauderdale's Las Olas Boulevard, a cigar and martini bar called Bova Smoke will join the company's Bova Prime. Both openings are expected ``before the end of the year,'' a spokeswoman says.
