A FORK ON THE ROAD

Two best friends with sweet ambitions launched a dessert catering company that specializes in fresh, hot mini doughnuts and other fun foods made on site. Yojani Blandino and Maria Acosta are the Donut Divas, and they bring a carnival atmosphere along with their doughnut machine.

On a recent Sunday afternoon, Blandino worked behind the machine's plastic shield, using a small stick to turn the golden brown doughnuts in a trough of bubbling oil. Music thumped as a DJ spun at a backyard birthday party for her son, Anthony, 8.

Besides the doughnuts there was a candy cart loaded with jars of rainbow lollipops, candy necklaces, Gummies and more, plus a ''fudge puppie'' station where an attendant made Belgian waffles on a stick dipped in melted chocolate and topped with whipped cream and sprinkles. The same afternoon, Acosta was overseeing a mini funnel cake station at a country club.

The Divas mostly work wedding receptions, setting up near the exit and sending guests home with freshly made doughnuts in goody bags. They also sweeten up bar and bat mitzvahs, baby showers, company picnics, charity events, grand openings, proms and school fundraisers.

Blandino used to be an office manager for a pest control company, but got into chocolate fountains and decided to work for herself. She met Acosta, an event coordinator, through mutual friends, and they joined forces last July. Within four months, they paid back a start-up loan from Blandino's sister and began investing in more equipment (each station costs about $5,000).

A metal bowl attached to the doughnut machine squeezes ring-shaped blobs of batter into hot soy oil. The doughnuts brown on one side and are flipped over, then move through a chute and drop onto a screen to drain. Toppings include powdered sugar, cinnamon sugar, condensed milk, raspberry syrup and chocolate. Oreos and candy bars are also dipped in the doughnut batter and deep-fried.

With the start of wedding season, the Divas are gearing for a busy June.
