Dinner in Minutes Recipe: Broccoli Linguine

SIDE DISH
BROCCOLI LINGUINE
¼ pound linguine, preferably fresh
½ pound broccoli florets (about 3 cups)
2 teaspoons olive oil
Salt and freshly ground pepper
Bring 3 quarts water to a boil in a large pot. Add linguine and broccoli. Cook 2 minutes. (With dry linguine, cook pasta alone for 7 minutes; add broccoli and cook 2 more minutes.) Remove ¼ cup water from pot. Drain linguine and broccoli, and return to the pot. Mix olive oil into reserved water, pour over pasta mixture and toss. Add salt and pepper to taste. Divide between 2 plates and top with fish and sauce. Makes 2 servings.
Per serving: 251 calories (23 percent from fat), 6.3 g fat (0.6 g saturated, 3 g monounsaturated), 42 mg cholesterol, 10.3 g protein, 40.2 g carbohydrates, 3.6 g fiber, 60 mg sodium.
