Turkey goes south of the border

Once you have the corn on the stove, you can begin microwaving the enchiladas.
Get a jump on Cinco de Mayo, next week's celebration of Mexican patriotism, with a speedy meal that finds its inspiration south of the border.
Both our enchiladas and esquites (fried corn) take less than 10 minutes to prepare. Each serving has 589 calories, with 25 percent of calories from fat.
Fred Tasker's wine suggestion: Life isn't all wine (only mostly). How about a nice, light Corona?
HELPFUL HINTS
Look for no-sugar-added tomato sauce.
Refried beans are stocked in the ethnic section of the supermarket.
COUNTDOWN
Assemble enchiladas.
Sauté esquites.
Heat enchiladas in microwave.
SHOPPING LIST
To buy: 1 package 6-inch corn tortillas; ½ pound reduced-sodium, sliced turkey breast; 1 can no-fat refried beans; 1 small container no-salt tomato sauce; 1 small package shredded, Monterey Jack; 1 small bunch cilantro; 1 container diced onion; 1 container diced green bell pepper; 1 small package frozen corn kernels.
Staples: Canola oil, hot pepper sauce, salt, black peppercorns.
