Dinner in Minutes Recipe: Rosemary Lentils

SIDE DISH
ROSEMARY LENTILS
1 ½ cups canned rinsed and drained lentils
1 medium garlic clove, crushed
½ teaspoon dried rosemary
Salt and freshly ground pepper
2 tablespoons chopped fresh parsley (optional)
Place ¼ cup water, lentils, garlic and rosemary in a saucepan. Bring to a boil and cook 2 to 3 minutes. Add salt and pepper to taste. Sprinkle with parsley and serve. Makes 2 servings.
Per serving: 179 calories (4 percent from fat), 0.7 g fat ( 0.2 g saturated, 0.1 g monounsaturated), 0 cholesterol, 13.6 g protein, 31.2 g carbohydrates, 12.2 g fiber, 6 mg sodium.
