Spicy, flavorful Kung Pao Chicken is coated with a sauce of garlic, ginger, red chile peppers and soy sauce. It's perfect for Chinese New Year, the year of the rat, which begins Thursday. Serve it over noodles, symbolic of a long life.

This meal contains 620 calories per serving, with 29 percent of calories from fat.

HELPFUL HINTS:

• ½ teaspoon crushed red pepper can be used instead of chile peppers.

• Distilled white vinegar with a little water can be used instead of rice vinegar.

SHOPPING LIST

To buy: ¾ pound boneless skinless chicken breast, 1 small bottle rice vinegar, 1 small package dried small red chili peppers (or bottle crushed red pepper), 1 small bottle hoisin sauce, 1 piece fresh ginger, ½ pound broccoli florets, 1 container unsalted roasted peanuts, 1 small bottle sesame oil, 1 small bunch scallions and 1 small package Chinese noodles.

Staples: low-sodium soy sauce, garlic, salt and black peppercorns.
