Everybody makes a big fuss about Beaujolais Nouveau when it hits the market each November, made of grapes picked just weeks earlier in September -- because it's the first new wine of each vintage. Fewer know that only about 30 percent of Beaujolais is made in the ''nouveau'' style. And tradition says you drink that up by Christmas.
