Green Goddess Dressing à la Applebee’s
1 ripe avocado
1 to 2 anchovy filets
1 green onion, green parts only, chopped
2 tablespoons chopped chives
2 tablespoons chopped fresh tarragon
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons tarragon vinegar
Halve the avocado and spoon out the pulp. Place in a blender or food processor with all the remaining ingredients and pulse until smooth. Cover and refrigerate at least an hour before serving. Taste for seasoning and add salt, pepper and more vinegar as needed. Makes about 11/2 cups.
