Oven-Fried Green Tomatoes

Oven-Fried Green Tomatoes

4 cups cornflakes

1/4 cup flour

1 teaspoon garlic salt

1/2 teaspoon dried basil

2 egg whites

2 tablespoons water

2 large green tomatoes

Vegetable oil spray

Heat oven to 400 degrees. Crush the cereal (you’ll end up with about 1 cup) and place in a pie plate. Combine the flour, garlic salt and basil in a second pie plate.. Beat the egg whites with the water with a fork in a third container.

Slice tomatoes about 1/2-inch thick. Dip in the flour, then in the egg white, and finally in the cornflake crumbs. Dip a second time in the egg and then in the corn flakes. Spray a cookie sheet with vegetable oil and arrange tomato slices on top. Bake until browned, about 8 to 10 minutes. Makes 4 servings.
