Story: Hoppy beers like IPAs are best when they’re fresh, which is pretty much guaranteed with a local brewery like Boynton Beach’s Due South Brewing Co., which opened in 2012 and released Due South Category 3 IPA, its first canned beer, late last year. It delivers a fierce blast of citrus aromas and pine-resin flavors backed by slightly sweet malts.
Pairing: Category 3 stands up to bold, garlicky dishes without overpowering their flavor. It adds a snap of citrus brightness to a plate of sauteed razor clams and garlic at Bon Picat in Doral.
