Greek-Style Potatoes

This dish, adapted from, is good with baked chicken or swordfish and green beans in tomato sauce topped with feta.

1/3 cup olive oil

2 garlic cloves, minced

1/4 cup fresh lemon juice

1 teaspoon each dried thyme and rosemary

6 baking potatoes, peeled and quartered

Heat oven to 350 degrees. Whisk oil with 11/2 cups water or stock, garlic, herbs and salt and pepper to taste. Arrange potatoes in a baking dish and pour mixture over potatoes. Cover and bake about 11/2 hours, turning from time to time until tender but firm. Makes 4 servings.

Per serving: 296 calories (50 percent from fat), 17 g fat, (2.4 g saturated, 12.3 g monounsaturated), 0 cholesterol, 3.9 g protein, 33.7 g carbohydrate, 4.2 g fiber, 12 mg sodium.
