This dish, adapted from Allrecipes.com, is good with baked chicken or swordfish and green beans in tomato sauce topped with feta.
1/3 cup olive oil
2 garlic cloves, minced
1/4 cup fresh lemon juice
1 teaspoon each dried thyme and rosemary
6 baking potatoes, peeled and quartered
Heat oven to 350 degrees. Whisk oil with 11/2 cups water or stock, garlic, herbs and salt and pepper to taste. Arrange potatoes in a baking dish and pour mixture over potatoes. Cover and bake about 11/2 hours, turning from time to time until tender but firm. Makes 4 servings.
