Beer of the week: Green Flash Palate Wrecker

Green Flash Brewing Co.

Beer: Green Flash Palate Wrecker

Style: Imperial India pale ale

Alcohol: 9.5 percent by volume

Price: About $13 a four-pack of 12-ounce bottles at Total Wine & More

Story: Our last Green Flash beer of the week was another high-octane IPA, the seasonal Green Bullet. The brewery is back with a fresh seasonal, Palate Wrecker, available through March. With six pounds of hops per barrel, the beer is a bitter assault on the tongue. Layers of grapefruit rind, caramel and pine resin abound in the aroma and flavor.

Pairing: Try Palate Wrecker with something sweet to assuage its bitter bite. It pairs seamlessly with the decadent flavors of maple-bourbon syrup and toffee butter on a warm sticky icky bun at Swine in Coral Gables.
