Radish, Mint, and Pistachio Salad
This recipe adapted from simplyrecipes.com is good with grain dishes or added to a wrap with seafood or chicken.
1 pound red radishes, cut into 1/4-inch thick wedges
2 small shallots, minced
Zest and juice of 1 lemon
1/4 cup shelled pistachios, toasted
10 large mint leaves, sliced thin
2 tablespoons virgin coconut or olive oil
Mix radish wedges, shallots, lemon zest and juice and salt to taste in a bowl and let sit for 15 minutes. Add pistachios, mint and oil, and toss. Makes 4 servings.
Per serving: 137 calories (64 percent from fat), 10.4 g fat ( 6.3 g saturated, 2.2 g monounsaturated), 0 cholesterol, 2.9 g protein, 10.3 g carbohydrate, 2.7 g fiber, 48 mg sodium.
