Story: Brooklyn Lager, the flagship of New York’s Brooklyn Brewery, gets its floral aroma and fresh orange-rind zip from dry-hopping, in which the beer is steeped with fresh hops as it ages. Usually reserved for hop-forward ales, the technique adds a bitter dimension to the lager’s sweet, malty notes of caramel and toasted bread.
Pairing: Brooklyn Lager is my go-to with fried fish. Its light body and clean, dry finish refresh the palate, lifting away salt and grease. Try it with a fried whole yellowtail snapper at Casablanca Seafood, 404 N. River Dr., Miami.
