The day Kenny Tang decided to shred a duck and cook it to tender perfection in hot-and-sour soup is the day I became a fan of soup at a Chinese restaurant. The delicious dish is typical of the 50-year-old chef, who adds distinctive but not radical enhancements to traditional Chinese fare.

Open since May, his Coral Springs restaurant, in a quiet shopping plaza off Atlantic Boulevard, is a modest looking spot with a large open kitchen that is visible from every table.
