Spinach and Pear Salad

This salad adapted from allrecipes.com can be made with apples, peaches, plums or other seasonal fruit. Serve with a take-and-bake-pizza block.

2 pears or other fruit, cored and thinly sliced

Juice of 1 lemon

4 packed cups baby spinach leaves

1 shallot, finely chopped

1/2 cup shaved Parmesan cheese

1/2 cup pine nuts, toasted

1/2 cup bottled raspberry vinaigrette

Place the sliced pears in a glass bowl and toss with the lemon juice. Place the spinach in a serving bowl and add the shallot, Parmesan and pine nuts. Drain pears and add to the salad, tossing to blend. Serve with dressing on the side. Makes 4 servings.

Per serving: 332 calories (67 percent calories from fat), 26 g fat, (4.1 g sat fat, 4.1 g mono fat) 9 mg cholesterol, 7.5 g protein, 21 g carbohydrates, 4 g fiber, 558 mg sodium.
