1 package microwaveable brown rice to make 11/2 cups cooked rice
1/2 cup lite coconut milk
1 cup frozen petite peas, defrosted
Salt and freshly ground pepper
Cook rice according to package instructions. Measure 11/2 cups and set aside the remaining rice for another dinner. Add the coconut milk, peas and salt and pepper to taste. Makes 2 servings.
