Spicy Italian Pork Chops
This recipe adapted from Allrecipes.com makes a quick and easy meal. Serve with buttered pasta and some of the sauce, or crusty bread along with a leafy salad.
1/4 cup extra virgin olive oil, divided use
4 boneless pork chops, about 1 pound, pounded 1/4 inch thick
4 garlic cloves, thinly sliced
1 large tomato, about 8-ounces, diced
1/2 cup white wine
3 tablespoons minced fresh parsley
1/4 teaspoon red pepper flakes
Heat 2 tablespoons olive oil in a skillet over medium-high heat. Season the pork chops with salt and pepper, and sear on both sides. Remove and set aside.
Heat remaining oil in the skillet over medium-high heat, and saute garlic 30 seconds. Add the tomato, wine, parsley and pepper flakes. Cook until thickened.
Add pork chops, and cook 5 minutes or to an internal temperature of 145 degrees. Serve chops topped with the sauce. Makes 4 servings.
