Cochon 555, a traveling culinary competition that promotes sustainably farmed heritage pork, is returning to Miami April 14 as part of its 10-city tour. Five chefs will show their chops with five hogs for a chance to represent South Florida at the finals in Aspen, Colo., in June. Expect butcher demonstrations, pork tastings, beer, artisan cheeses, oysters and pork-spiked desserts. New in 2013: a tartare bar and cocktail competition. Details are incomplete, with no venue and just one competitor (Yardbird’s Jeff McInnis) announced, but tickets ($125, VIP $200) are on sale at cochon555.com.
