Mashed Sweet Potatoes With Honey and Caramelized Apples
2 pounds sweet potatoes
2 tablespoons unsalted butter
2 teaspoons vegetable oil
1 large Granny Smith apple, peeled, cored and diced
1/2 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
Salt and freshly ground pepper
3 tablespoons honey, or more to taste
Heat oven to 350 degrees. Prick sweet potatoes with a fork, place on aluminum foil and bake 60 to 90 minutes, until soft to the touch. Set aside to cool 15 minutes.
Heat butter and oil in a skillet over medium-high heat. Cook apple 6 to 7 minutes, until it starts to soften, tossing every few minutes. Add cinnamon, nutmeg, and salt and pepper to taste. Cook until apple begins to brown. Set aside.
Scoop sweet potato flesh into a bowl and beat with an electric mixer until smooth. Add honey and caramelized apple, beating at low speed to combine. Makes 6 servings.
