Recipe for Goya black beans cupcakes with guava frosting:

Makes 12 cupcakes

1 can of Goya back beans

1 tablespoon Goya sweetened condensed milk

3/4 cup unsalted butter, at room temperature

1 1/4 cup Goya Panilla cane sugar

1 tablespoon fresh ginger, grated

Zest of 2 limes

1/2 cup almond flour

2 large eggs, room temperature

2 teaspoons vanilla bean paste

1 1/4 cups all purpose flour, sifted

1/2 teaspoon baking powder

1/2 teaspoon baking soda

3/4 teaspoon kosher salt

1/2 cup + 2 tablespoons sour cream

Cooking Instructions:

Preheat oven to 350°F and fill cupcake pan with cupcake paper liners.

Puree 1/2 the can of Goya black beans with the Goya sweetened condensed milk. Rinse and drain the other 1/2 can, set aside.

In a stand mixer with a paddle attachment, cream the butter, sugar, ginger and lime zest about 5 minutes or until light. Add the almond flour and mix until light and well creamed. Add the eggs and the vanilla and mix until incorporated, then add the flour, baking powder, baking soda and salt, and mix until incorporated.

Remove from mixer and fold in sour cream, puréed black beans and whole beans by hand.

Fill cupcake liners 3/4 full. Bake 15-18 minutes or until a toothpick comes out clean.

Remove from oven. Allow to cool completely.

Recipe for guava frosting:

12 ounces cream cheese, preferably Philadelphia brand

8 ounces unsalted butter, at room temperature

3/4 pound powdered sugar

Zest of lime

1 teaspoon vanilla bean paste

1/2 teaspoon kosher salt

3/4 package Goya guava paste

In a stand mixer with a paddle attachment, cream the cream cheese, butter, powdered sugar, lime zest, vanilla paste and salt for 6 - 8 minutes. The mixture should be light and fluffy. Add the guava paste and mix until incorporated.

Frost the cupcakes or use a piping bag with a star tip to pipe the frosting decoratively.

A gastronomical only-in-Miami delight will debut at this weekend’s Food Network South Beach Food & Wine festival: behold the black bean cupcake with guava frosting.

You heard right.

The cupcake was commissioned by Hispanic foods giant Goya Foods, which partnered with renowned pastry chef, Hedy Goldsmith, to come up with an exclusive dessert recipe for the popular food festival using the company’s line of products.

In the past, trendy chefs have pushed the envelope with Cuban staples but it’s hard to recall the last time two deeply traditional foods like highly-seasoned black beans and sweet guava were married, then morphed, into a traditionally American dessert such as a cupcake.

Goya Foods said it picked Goldsmith, executive pastry chef at Michael’s Genuine Food & Drink in Miami’s Design District and Grand Cayman, because of her “playful approach to desserts that often skirt the line between sweet and savory,” said Frank Unanue, president of Goya Foods of Florida.

“This was an exciting challenge to go a little out of my box, and I know we nailed it,’’ Goldsmith said. “I can’t wait to see the expressions on festival guests’ faces when they are pleasantly surprised to enjoy black beans in cupcake form.”

Her creation will be served at Goya’s outpost at the Grand Tasting Village on Sunday from 3 to 5 p.m.

Goldsmith will be on hand to demonstrate the recipe, which also includes sweetened condensed milk, almond flour, cane sugar, kosher salt, limes and fresh ginger.

Goldsmith has already made a name for herself with homemade versions of her favorite childhood treats like Cracker Jacks, Nutter Butters, Oreos and her signature piece - Pop-Tarts.

For New Jersey-based Goya, which also has a large distribution center in west Miami-Dade, the cupcakes represent a clever marketing ploy on a big food stage.

“The partnership with pastry chef Goldsmith gives us the perfect opportunity to showcase the authenticity and versatility our products bring to any type of cuisine,” Unanue said.
