Hemp Seed Dressing

Great on salad greens or drizzled on vegetables, this also raises roasted cauliflower to new heights. Miso, which is fermented soybean paste, is available at natural foods stores and some supermarkets.

1/2 cup hemp seeds

Juice of 1 lemon

1 garlic clove

1 bunch flat-leaf parsley, tough stems discarded (roughly 1 cup leaves)

1/4 cup water

1 tablespoon white miso (preferably organic)

1 teaspoon honey or agave

In a blender or food processor, whiz together the hemp seeds, lemon juice, garlic and parsley until it forms a bright green paste — about 1 minute. Slowly pour in water while continuing to blend. Add miso and honey and blend until mixture is smooth and creamy.

Keeps refrigerated and covered for several days. Makes 2/3 cup or 4 to 6 servings.

Per serving: 225 calories, 26 percent calories from fat, 7 grams fat (0.5 g saturated, 5 g monounsaturated), 0 cholesterol, 11 g protein, 15.5 g carbohydrate, 10 g fiber, 0 sodium.
