Key Lime Pie Filling

To serve, layer graham cracker crumbs into the bottom of each mini-dessert dish. Top each with a dollop of Key Lime Pie Filling. Add another layer of crumbs and another of Key lime mixture. Just before serving, garnish with whipped cream and half of a lime slice.

4 egg yolks

1 (14-ounce) can sweetened condensed milk

1/3 cup fresh lime juice, preferably Key lime

Zest of 1 lime

Heat oven to 350 degrees.

In a nonreactive medium bowl, whisk the egg yolks and sweetened condensed milk until smooth. Whisk in the lime juice and zest. Pour into a lightly greased 9-inch pie plate.

Bake 15 minutes. Remove from oven and cool on a wire rack. Refrigerate until ready to serve. Makes about 11/2 - 2 cups.
