Clabber Girl Fruited Spice Cake

1 cup dried fruit (cranberries, figs, dates, apricots, cherries and/or citron)

1 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/2 teaspoon ground cloves

3/4 cup shortening

1 1/2 cups light brown sugar

3 eggs

2 cups all-purpose flour

1 cup whole wheat flour

5 teaspoons reduced-sodium baking powder (such as Rumford)

1 cup milk

1 teaspoon vanilla

1/2 cup chopped walnuts, almonds or pecans

Heat oven to 375 degrees. Grease and flour a tube pan. Rinse dried fruit and pat dry with paper towel. Combine in a small saucepan with cinnamon ginger, cloves and 3/4 cup water. Boil 3 minutes, stirring constantly; cool.

Beat shortening and sugar until fluffy. Add eggs, and mix well. In a separate bowl combine dry ingredients, mixing thoroughly. Beat into shortening mixture, alternating with milk, until combined and smooth. Fold in vanilla, nuts and fruit mixture. Pour into prepared pan and bake 70 to 80 minutes, until cake tests done. Makes 12 servings.

Per serving: 400 calories (130 calories from fat), 14 g fat (4 g saturated fat, 0 g trans fat), 61 g carboydrates, 2 g fiber, 270 mg sodium.
