Cook's Corner Recipe: Fluffy Citrus Dressing

DRESSING
FLUFFY CITRUS DRESSING
1 egg
½ cup sugar
1 tablespoon grated orange zest
2 teaspoons grated lemon zest
2 teaspoons minced fresh tarragon or 1 teaspoon dried
2 tablespoons lemon juice
1 cup heavy cream
Whisk the egg in a medium saucepan. Add the sugar, citrus zest, tarragon and lemon juice. Cook over low heat, stirring constantly until thick, about 5 minutes. Cool completely. Whip the cream until stiff and fold into the chilled dressing. Makes about 2 cups.
Per 2-tablespoon serving: 82 calories (63 percent from fat), 5.8 g fat (3.5 g saturated, 1.7 g monounsaturated), 33.6 mg cholesterol, 0.8 g protein, 7 g carbohydrates, 0.1 g fiber, 10.2 mg sodium.
