Cook's Corner Recipe: Perfect Rare Roast Beef

MAIN DISH

PERFECT RARE ROAST BEEF

• 1 boneless beef roast (about 5 pounds; tenderloin, eye of round, rump roast, etc.)

• Cracked pepper and/or minced garlic

Heat oven to 500 degrees. Cover the roast with seasoning. (Do not use salt, as it will toughen the meat.) Place in a roasting pan that has been lightly coated with vegetable oil spray. Add ½ cup water to the pan. Roast the beef for 5 minutes per pound. Turn oven to its lowest setting, but do not open door. Let beef continue to roast 2 more hours. Remove from oven and slice. Makes 2 to 3 servings per pound.

Per serving (based on 3 per pound): 312 calories (59 percent from fat), 20.3 g fat (8 g saturated, 8.6 g monounsaturated), 92.7 mg cholesterol, 30 g protein, 0 carbohydrates, 0 fiber, 344.4 mg sodium.
