Cook's Corner Recipe: Apple Raisin Bran Muffins

MUFFINS

APPLE RAISIN

BRAN MUFFINS

• 1 ½ cups flour

•  ¼ cup sugar

• 1 ½ teaspoons baking powder

•  ½ teaspoon ground cinnamon

•  ¼ teaspoon ground nutmeg

•  ¼ teaspoon salt

• 2 eggs

• 1 cup milk (reduced fat or skim OK)

•  ¼ cup vegetable oil

• 1 ½ cups raisin bran cereal

• 1 large apple, peeled, finely chopped (1 cup of fruit)

•  ½ cup chopped nuts, optional

Whisk flour, sugar, baking powder, cinnamon, nutmeg and salt in a large bowl. Beat eggs, milk and oil in small bowl until well blended. Add to flour mixture; stir just until moistened. (Batter will be lumpy.) Stir in cereal, apple and nuts. Spoon batter into greased or paper-lined muffin pan, filling each cup 2/3 full. Bake in 425-degree oven for 20 minutes, or until toothpick inserted in center comes out clean. Remove from tin and let cool 5 minutes before serving. Makes 12.

Per serving: 167 calories (34 percent from fat), 6.5 g fat (1.1 g saturated, 2.5 g monounsaturated), 37.3 mg cholesterol, 4.1 g protein, 24.3 g carbohydrates, 1.6 g fiber, 172.2 mg sodium.
